Bies Whiskey Polish Wine Cask Finish – Qvevri Edition is the result of our pursuit of an exceptional spirit – one that’s delicate yet layered and full of character.
We chose a five-year-old distillate from Northern Ireland and finished it for six months in a cask that previously held Polish wine made from Seyval Blanc and Johanniter grapes.
We are likely among the first – if not the very first – to experiment with aging whiskey in casks that previously held Polish wine.
Fot this edition of Bies, we used 250-liter Qvevri wine casks (orange wine / Georgian – style) from the Płochocki Vineyard near Sandomierz.
